This is my favorite breakfast. I like it because it is filling, tastes good, and is good for me. I hope you like it too.
I make 1/2 C quick cooking oats in a scant 1 C water on the stovetop (prefer the texture, but you can microwave it).
Then, I make a mixed berry sauce with:
1 package of frozen mixed berries (you could totally do fresh berries since they are in season)
1/4 C water
1/4 C sugar
2 T cornstarch mixed in 2 T cold water
First put the berries, water & sugar in a saucepan. Cover & bring to a simmer. When it is all thawed and heated through, bring to a boil and add the cornstarch mixture while stirring. Stir till thickened.
Serve 1/2 C of berry sauce over oatmeal. The sauce makes enough for 4 days/servings. I like it cold from the fridge on hot oatmeal. It cools the oats down.
