I can't believe how the support from all of you has really motivated me. I thank you for all visiting me & commenting on my last post it is so incredibly helpful to me & I truly appreciate it! Why do I run from here when I need your support the most? So a** backwards! Anyway I lost 2 lbs & I didn't do much. I added extra water, started eating oats and eggs (mostly whites) for breakfast, either a salad or other veggie based lunch & a pretty typical dinner. I thought maybe a half pound, but 2 pounds, wow that is just what I needed! Now I'm only 4.5 lbs away from where I was when I started slacking. I think I've felt I gained more than 6.5 was because the lack of working out has me looking less fit. I wonder how long it will take to tighten up again? My belly is not looking good. It's not that at it even looked great at my lowest weight, but I have a total pouch that hangs over my favorite jeans that I'm constantly pulling them up to cover that pouch! I'd so love to lose that asap! I keep thinking about going to the gym, I've even had a couple dreams that I've run into my instructor & she isn't too happy with me. I want to go back so bad so why am I letting this fear hold me back? I know I just have to do it & then it will be like second nature again, I know. It is taking that first step that is so hard!

I did tons of food prep over the weekend, I try do do lots of things that will both save us money & make things myself to avoid all the added crap that packed foods contain. I thought I'd share some of what I did. I made a batch of red pepper hummus, & packaged half of it just as is & added cilantro to the other half & packaged that up after making us our favorite sandwiches. My own knock off of Panara Bread's Mediterranean sandwich. I make some variety of hummus about once a week or so. We all love it it's great for a quick lunch even the kids love dipping into it for school lunch. I get the dried organic beans from Whole Foods, from the bulk bins, that is where I find them cheapest. The canned beans are pricey when you compare them to the price of dried. It's a just convenient to open a can but did you know that canned goods contain a toxic hormone disrupting chemical Bisphenol-A (BPA)? I freeze them & that makes them almost as convenient & much healthier so I'm happy. I usually keep a few cans of Eden Organic beans for in a pinch meals because they are the only company that isn't using BPA in their cans, but at over $2/can I save them for emergency situations. I stock a few months worth of our favorite dried beans (garbanzos, white great northern, black, kidney, & white navy beans for baked beans) I soak & cook them in huge batches & freeze them in recipe sized portions. When I use up my last jar I soak more & start the process over again. On Saturday I soaked some garbanzos & on Sunday I cooked them. Then I packed them up in canning jars & brought them down to the basement to our standing freezer. Then last night I soaked pinto beans they are cooking right now I will be turning them into re-fried beans that I will then freeze. Another standby quick lunch or dinner even. I also have a batch of yogurt culturing in a cooler in my sink, I do this at least once a week I think I'm saving about $100/month on yogurt alone!!! I also made ww pizza from scratch yesterday one topped with tomatoes, garlic, olives, red peppers, mushrooms & onions. The other with tomatoes, garlic, black beans, onions & sprinkled with cilantro when they cam out of the onion served with a lime wedge & a dollop of sour cream or greek yogurt (you can make your homemade yogurt greek by straining it in coffee filter or cheese cloth in the fridge, but not too long or you will have cream cheese), yum!

Here were my goals last week...
1. Drink at least 10 glasses of water a day (this is really difficult for me when it gets chilly out) Did it!!!
2. Change my usual breakfast of scrambled eggs with buttered toast back to oatmeal & egg whites for the rest of the week. I'm out of rolled oats, but I do have steel cut oats I can make a big batch ahead & re-heat in the toaster oven in the am so that I can still make it quickly. Did it!!!
3. Stop eating baked goods, maybe stop baking so much? Did it!!!
4. Cut down to 1 cup of tea with honey per day. I've been having several the with plenty of honey! I did it, all but 1 day
5. Make better food choices for lunch & dinner Totally did it!!!

11-9-09 WI & evaluate what goals I've had success with & make some more I WI at 138 so I lost 2 lbs just by making these tiny changes! I'm stoked! Also I brought my dinner to work with me, a goal I didn't set, but I knew it was time to start being proactive. I had some of my homemade coconut curry butternut squash soup all ready to go so I packed it in my bag along with an apple & yogurt topped with a drizzle of maple syrup & some chopped raw cashews, it was very satisfying!

Goals for this week

1. Take vitamins twice a day, (I'm taking them in the am only right now.

2. Journal food
3. Committing to take my food to work with me
4. Fitting some sort of physical activity into everyday even if it is just a walk.

I never would have thought of freezing the beans... excellent idea! I've recently decided to start eating vegetarian meals so I've been incorporating beans into some of my meals, but you're right that canned is a lot more expensive so I've started buying dried. Initially I was hesitant since it's less convenient, but not if you can cook a whole batch and freeze them.

I really want that soup recipe! That sounds so good. Will you share it? I need some good recipes. Im so bored with eating the same things. Im glad your doing well and that you had a great loss. So glad your back!

Wow, you're doing great! You inspire me- I love the idea of freezing dried beans as I love dried beans.

Wow..you are SO focused! You are in fact motivating me just by reading your blog today! Also, with my layoff coming..thanks for the tips on the dried beans etc. I am going to start doing that to save $$ as well. I'm sure we'll end up pinching pennies if I can't find a job right away and am on unemployment! I am so nervous already, and I don't even have an official release date yet!

Great job, Erica! Way to get back on track. This week is my week. I have a few challeneges with a dinner meeting and a day out of the office so temptation to eat the lunch provided but I will plan ahead. You are so right about running from BTL when you need it most. I did it too. I guess I was just not ready to put it out there. Next time I will! Have a great day and great week!
