1/4 cup of natural peanut butter
1/4 cup soy sauce (I use lite and less sodium)
2 Tbsp of lemon juice
2 tsp sesame seed oil
2 tsp fresh ginger, grated
1 Tbsp honey
1 tsp garlic powder
pinch of hot pepper flakes
Heat over medium heat until bubbling, stirring constantly. When its finished, either let it cool and refrigerate, or pour over already cooked chicken (I poach mine) and place under the broiler for 5 to 7 minutes.
I was thinking to sub out a portion of the soy sauce with a little water to get the salty flavor down, but I haven't done it yet. It's definitely not high in sodium though. Hope you enjoy it!
