I made black bean brownies for the first time. I know they sound gross, but they are delicous! I posted about them on my blog over at hernewweigh.blogspot.com.

Peanut Butter Better Than Sex Cake

Serving size: 24
Points: 3

18 1/4 oz chocolate cake mix - devil's food, 1 box
10 oz. Diet Coke
1 egg white
7 oz. FF sweetened condensed milk - 10T
2 Tablespoons lowfat peanut butter
8 oz. (1 tub) Cool Whip Free, thawed
7 Nestle Fun Size Butterfinger candy bars

Combine cake mix, diet cola, and egg white. Bake according to cake mix instructions in a floured 9x13 pan. A few minutes before the cake is to be done combine sweetened condensed milk and peanut butter in sauce pan. Cook and stir on low to make creamy and warm. When cake is done and still hot, poke holes in top of cake with knife and pour peanut butter mixture over top of cake. You may have to spread the mixture a little to help it go down into the holes. Sprinkle top with half of chopped Butterfingers. Cool cake completely. Cover with Cool Whip and sprinkle remaining Butterfingers over top. Keep in fridge until ready to serve

you can also make them as cupcakes. One serving really is enough because they are very rich.

A great WW sweet suggestion is cinnamon toast. Using the 35 cal per slice bread, add 1/2 teaspoon of brown sugar and a pinch of cinnamon. I popped my in the toaster oven on low setting and it was oh so good!
2 slices of bread with 1 T brown sug (+ cinnamon) = 3 points

I made an incredibly simple cherry pie. I took a pie crust, poured in some no sugar added cherries, sprinkled the top with brown sugar and splenda. I baked it for about 30 minutes until the crust was done and served it with 1/4 c. Breyer's free icecream. It is an incredibly tasty treat for 3 points.

I found waffle bowls for one point. I add some Breyers Free icecream and lite Hershey's syrup, and it's a delicious 3 point dessert. I was also thinking about getting some sprinkles and fat free cool whip for an even more fun treat.

Banana Cupcakes

Ingredients:
2 over ripe bananas
1 bix of yellow cake mix
1 cup of apple sauce
1/2 cup of water

mix it all together
bake per cupcake instructions on box
depending on how many cpcakes you squeeze out of the batch they can run from 2-2.5pts ea.
I borrowed the base of this recipe from Michele I had to add water it was way to dry and then thought a little cinnamon applesauce would be good too.
They turned out great nice and fluffy they don't stick to the cups and taste yummy I think I'll throw some cool whip on top.

I'm in love with Edy's icecream lately. I feel like I almost have my own Edy's icecream parlor. Right now, we have chocolate fudge brownie, cake, cookie dough, cheesecake diva, and butterfinger. I have a 1/2 cup just about everyday. Three points sounds like a lot, but it's totally worth it for such an awesome treat. My favorite is the cake because I swear it tastes just like eating real cake. Cheesecake diva is a close second because it has cheesecake flavored icecream with brownie pieces.

1 Point No Crust Strawberry Pie
4 cups sliced strawberries (do not use frozen)
1 box sugar-free strawberry gelatin
1 (6oz) box sugar-free, fat-free vanilla pudding, cook style
2 cups water

Spray a pie pan with cooking spray. Put strawberries in pan. Using a whisk, combine water and pudding in a small sauce pan and bring to a boil. Remove from heat and add gelatin. Whisk and pour over strawberries. Refridgerate to set. Makes 8 servings.

(If you do not have cook style pudding, use instant pudding instead. However, you still need to heat the gelatin in order for it to set.)
