I call this 'Cheaters Chicken' because it tastes like it was really hard to make, but it's so simple you'll laugh when you hear it! For me it's important to have simple, quick meals to make when I get home.
You need 1 piece of boneless, skinless chicken per person eating. I use chicken breasts that are flash frozen and are HUGE, so we actually split 1 breast per 2 people.
1 large jar of your favorite picante sauce, we use Pace Mild Picante Sauce. My mom likes the chunky style.
1 serving of prepared brown rice per person.
In a pyrex dish, lay out the defrosted chicken. Keep it in a dish that's close to the size of all the chicken laid out in one layer. Next, cover the chicken with picante sauce. We just pour the entire large jar in, but that will depend on exactly how "large" your jar is. Basically, smother the chicken.
Put it in the oven to bake until the chicken is done. Ours cooks at 350 for about 45 minutes usually.
When the chicken is done, pull it out of the oven and serve over the rice. Spoon extra sauce on it to make sure the rice is good and saucy, too!
Viola! Easy, peasy! Low cal, very tasty, very filling, and just YUMMY! They'll think you went to the trouble to cut up all those peppers, onions, and tomatoes yourself! Little do they know... hee!
