A friend made this for me, and it was pretty good! I thought I'd post it here. I made mine without cheese to make it a lower fat version.
1 can black beans, rinsed and drained
1/2 cup salsa (any kind works, green salsa is good)
1/2 cup corn (any kind also works, but Trader Joe's frozen roasted corn is yummy!)
1/2 tsp (to taste) of Chipotle powder- you can also use 1/2 tsp cumin if you don't have chipotle powder. Warning- if you don't like spicy food, stay light on the Chipotle- it is fairly spicy!
1/4 cup water
1/4 cup thinly sliced scallions or cilantro, or both!
Place black beans in a pot on the stove. Use a fork to smash them until they are about halfway mushed up. (Like the technical chef terms?) Add salsa and spices, cook on med. low until hot. Add corn at the end. Garnish with onions or cilantro. Serve with tortilla chips, or cut up vegetables if you are REALLY healthy. I guesstimate it's about 2 points for 1/2 cup serving. Maybe less with the veggies added.
